Roasted Garlic Red Pepper Pesto Tilapia Recipe

Zucchini, onions, almonds and more combine to create an entrée you’ll truly love. This fish dish is fantastic. It’s a great heart healthy entrée that’s also perfect for Paleo Dieters. Use organic vegetables and produce and get them fresh from your local farmer’s market. Enjoy.

Ingredients

  • 1lb tilapia
  • ½ cup blanched almonds
  • 1 bundle cilantro, stems removed
  • ½ 7oz jar of roasted red peppers
  • 6-8 garlic cloves
  • 2 zucchini, chopped
  • 1 red onion, chopped
  • 1 orange pepper, chopped
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • ½ teaspoon onion powder
  • roughly 7-8 tablespoons olive oil (I really have no idea because I just poured)

Instructions for Roasted Garlic Red Pepper Pesto Tilapia Recipe

To begin first season both sides of the fish with 1 teaspoon paprika, 1 teaspoon salt, and 1 teaspoon pepper. The tilapia will be cooked later and can be set aside for now. Time to roast the garlic… In a deep pan, over medium heat, add the garlic cloves and a ton of olive oil and roast the garlic for approximately 6 minutes. Be sure to toss them often as they can easily burn. A perfectly roasted garlic clove will be soft when poked with a toothpick.

After roasting the garlic to perfection add them with the cilantro, roasted red peppers, and blanched almonds into a food processor. Be sure to mix these items thoroughly before adding the olive oil. Slowly add 1-2 tablespoons of olive oil and salt, pepper and onion powder until you acquire the consistency and flavor you are expecting. You are ultimately looking for a pesto consistency…hence the recipe title.

Now we will cook the vegetables. Using the same pan you cooked the garlic in add the veggies and toss in a pinch of salt & pepper and about half of the pesto you just made. Cover, the pesto smothered veggies and place over low heat. Simmer the veggies for approximately 7-9 minutes or until the vegetables are soft.

As the veggies are cooking and softening up we can cook the tilapia. Over medium heat, add a little olive oil to a pan and cook the fish for about 3 minutes per side. After the fish is cooked and ready to eat, add a portion of the veggies to a plate, top with the tilapia and drizzle the remaining garlic red pepper pesto you made over the top of the fish. ENJOY!
