Paleo Recipe: Simple Shrimp Salad

Summer is here and this light and fresh side salad is perfect for picnics, luncheons or any other meal for that matter. It can even be enjoyed as a quick snack all on its own. This recipe will make approximately 2-3 servings, but can easily be doubled or tripled up to accommodate any get together.

Ingredients:

  • 3 free range eggs, hard boiled, peeled, and chopped
  • 2 cups cooked and peeled wild (no farm raised) shrimp, chopped
  • 1 green apple, cored and diced
  • ½ red onion, diced
  • 4 stalks of celery, diced
  • ¼ cup ground Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon raw honey
  • ½ teaspoon parsley
  • ½ teaspoon thyme
  • ½ teaspoon basil
  • Salt and pepper

Instructions

To begin, boil your free range eggs over high heat for 15 minutes then place the eggs in cold water to cool. Peel the eggs and chop them. Now add them to a large bowl. Next chop the cooked wild shrimp, green apple, red onion, and celery and add to the bowl with eggs. Add the rest of the ingredients to the bowl and mix well. ENJOY!
