Paleo Recipe: Shrimp and Jalapeno Sweet Potato Biscuits

This Paleo friendly biscuit recipe is absolutely delicious and packed full of flavor! Made from all organic ingredients with free range eggs and wild shrimp. These all natural biscuits are going to get rave reviews around your dinner table.

Ingredients:

Serves 12

  • 1 large sweet potato or yam (2 cups mashed)
  • 3 free-range eggs, whisked
  • 3 tablespoons Coconut Flour
  • 4-5 wild shrimp, cooked, diced small
  • 3 tablespoons bacon fat, melted
  • 1 jalapeño, thinly diced
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

Preheat your oven to 415 degrees. Now poke holes in your sweet potatoes and bake them for approximately 40 minutes or until they are soft. After the sweet potatoes are baked, remove them from the oven and reduce the oven heat to 375.

Peel the potatoes and mash them up in a bowl using a fork. Now add the eggs and mix well with the sweet potatoes. Then add in the bacon fat and mix well. Once the bacon fat is well mixed start adding the dry ingredients. Mix in the coconut flour, baking powder, garlic powder, and salt and pepper. Finally add your cooked and diced shrimp and jalapeños. Mix all ingredients thoroughly.

Next you will need to line a baking sheet with parchment paper and use a scoop to drop your biscuits on the sheet. An ice cream scoop works great to make the scoops all the same size so they cook the same. You should get around 12 with this amount of mixture. Bake them in the oven for 22-27 minutes. Let them rest and ENJOY!
