Paleo Recipe – Beetroot Sun Dip

We like to promote the health benefits of beetroots to all of our patients. So we thought we better provide a recipe for all to enjoy.

Ingredients:

(All organic)

  • 2 large beetroots
  • 1/2 lemon, juiced
  • 3-4 tablespoons sunflower seeds (soaked overnight)
  • 1 teaspoon mustard powder
  • Pinch of salt
  • Freshly ground black pepper

Instructions for Beetroot Sun Dip

The first step in making this delicious dip is to prepare and cook the beetroot with the skin on until they become soft and tender. There are a few different methods to cook beetroot, but we boiled ours which takes about 30-60 minutes depending on their size.

After cooking the beetroot, peel them and chop them into small pieces to be blended.

Place the chopped beetroot into a blender with the remaining ingredients and purée until you reach the consistency you like. This might require a few taste tests along the way. Serve them with your favorite paleo snack chip or try them with oven roasted beet chips if you want the full beet experience. Enjoy!
