Paleo Diet Entrees – Roasted Grape Bacon Wrapped Filet Mignon

This tasty main dish is good for heart health and it part of a Paleo Diet. Make sure to use organic, grass-fed beef and organic grapes. Cook to taste (I like mine cooked medium) and enjoy!

Ingredients

  • 1.5 cups red grapes
  • 2 Grass Fed Filet Mignon
  • 2 strips of bacon
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon coconut oil
  • pinch of salt

Instructions for Roasted Grape Bacon Wrapped Filet Mignon

Preheat oven to 400 degrees. Line an 8×12 glass baking dish with a piece of parchment paper(this will make for easy clean up, if you don’t have parchment paper it is no big deal). Toss the grapes, balsamic vinegar, and coconut oil into your baking dish, top with a pinch of salt and toss to thoroughly coat. Now roast the grapes until they become soft… approximately 25 minutes.

After roasting the grapes about 15 minutes, place a medium sized skillet over medium heat. While we wait for the skillet to heat, wrap the bacon around the outside of the filet. Using a toothpick, connect the bacon to the steak by pushing the toothpick through both ends of the bacon into the filet. You want to ensure the bacon will stay in place as that’s key to making this delicious dish!

Slightly salt both sides of your filet mignon. Now first place the bacon sides onto your hot skillet which will release some of the bacon fat… this is great to cook the meat with
Cook the bacon all the way around for about a minute each side, then place your filet mignon into the bacon fat and cook for around 4-5 minutes per side (depending on how you like your steak cooked… I chose medium rare with such a high quality cut of meat). Top filet mignon with the roasted grapes and a dash of the balsamic vinegar that is remaining in the baking dish. ENJOY!
