Paleo Diet Entrée Recipe – Thai Chicken and Mango Fried Rice

Don’t tell anyone but the rice is really cauliflower shredded to look like rice. This tasty chicken entrée is heart healthy and great for Paleo Dieters. Make sure to use organic, free range chicken. Leave a comment and tell me how you like this dish.

Ingredients

  • 2 tablespoons duck fat (or other kind of fat)
  • 1 head cauliflower, cut into florets
  • 3 tablespoons coconut aminos (or gluten free soy sauce)
  • 3 teaspoons sesame oil
  • 2 teaspoons fish sauce
  • 1 teaspoon sriracha
  • 2 garlic cloves, minced
  • 1 pound boneless, skinless chicken breasts, cubed
  • 4 ounces button mushrooms, sliced
  • 1 orange bell pepper, sliced
  • 1 tablespoon minced jalapeño
  • 1 teaspoon minced fresh ginger
  • 1-2 cups mango, cubed
  • 3-4 tablespoons green onions, diced
  • cilantro, to garnish
  • salt and pepper, to taste
  • lime juice, to garnish

Instructions for, Paleo Diet Entrée Recipe – Thai Chicken and Mango Fried Rice

Add the cauliflower to a food processor with the shredding blade attachment to finely shred the cauliflower into “Rice”. Place a large skillet over medium-high heat and add the duck fat and shredded cauliflower to the heated skillet. Immediately include 2 tablespoons coconut aminos, 2 teaspoons sesame oil, 1 teaspoon fish sauce, and 1 teaspoon sriracha, along with a small pinch of salt to the skillet mixture, slightly toss to coat and continue to cook until the cauliflower begins to brown. While the cauliflower / “Rice” browns, place another skillet over medium heat and the minced garlic and 1 teaspoon of sesame oil along with the cubed chicken. Add 1 tablespoon coconut aminos and 1 teaspoon of fish sauce over the chicken and continue to cook. Once the chicken is almost thoroughly cooked and begins to brown, add mushrooms, bell pepper, jalapeno, ginger, mango, green onions and a small pinch of salt and pepper to the chicken, cover to let the entire meal steam. After the mushrooms and peppers become soft, add the chicken mixture to the cauliflower rice and mix well. Add a bit more salt and a dash of pepper. Garnish with cilantro and a squeeze of lime juice.
