Paleo Diet Entrée Recipe for Blackberry Glazed Grilled Pork Chops

Fire up the grill for pork chops better than you’ll find at the county fair. Don’t let the minimal prep time fool you, the taste is big with this heart healthy entrée. These chops are also ideal for those following the Paleo Diet. Make sure to use organic products and make sure to cook pork thoroughly.

Ingredients

  • 1-2lbs US Wellness Meats Pork Chops
  • 1 teaspoon cinnamon
  • ½ teaspoon dried thyme
  • salt and pepper, to taste
  • 12 ounces fresh blackberries
  • ½ cup balsamic vinegar
  • 2 tablespoons water
  • pinch of salt

Instructions for a Paleo Diet Entrée Recipe for Blackberry Glazed Grilled Pork Chops

First thing… get your grill going. you will want it at a decent medium-high heat for the pork chops. Careful though… you may want to wait if there is no one around to help monitor the grill. An unattended grill can be a dangerous thing!

Begin by placing the pork chops on a dish and then cover the pork chops with cinnamon, thyme, salt & pepper on both side and gently press the seasonings into the chop. Place a small saucepan over medium heat and add the blackberries, balsamic vinegar, water, and a pinch of salt. Let the sauce begin to mix together, be sure to stir the sauce often to make sure the bottom doesn’t burn. Now lower the heat and let the sauce simmer for about 3-5 minutes.

Pour half of the sauce into a small bowl leaving the blackberries in the saucepan (You will use them later as a topping). Coat one side of your pork chop generously with the sauce and then place that glazed side down onto the preheated grill. Now glaze the other side, cover grill and let the pork chop grill for 5-7 minutes per side. I coated each side of my pork chop multiple times to ensure a lot of the blackberry sauce was soaked up by the chop. Make sure your chop is cooked thoroughly and reaches at least 145 degrees before removing from grill. (Approximately 12-14 minutes total). Once the cook is complete, plate up your pork chops and top with your leftover blackberry sauce that has been simmering and thickening up. ENJOY!
