Paleo Dessert Recipe: Cinnamon Banana Waffles

Waffles are usually associated with breakfast, but once you taste this recipe you are going to instantly understand why we categorize this dish as a dessert!

Ingredients:

(All organic)

  • 2 medium bananas, very ripe
  • 2 eggs
  • 3 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • ¼ cup coconut or almond milk
  • 1 cup almond flour/meal
  • 1 cup unsweetened shredded coconut
  • 2 tablespoons arrowroot powder
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • pinch of salt

Instructions for Cinnamon Banana Waffles

First thing to do is to preheat your waffle iron. Mine takes a while to get good and hot so I make sure it is the first thin I do. Next you can add the bananas, egg, maple syrup, coconut oil, and milk to your blender and puree until you have a smooth batter.

Pour this batter mixture into a large mixing bowl and then add the almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt. Mix all these ingredients together well.

Once all ingredients are evenly combined you may want to slightly grease your waffle iron to help prevent the waffles from sticking. When the waffle iron is up to temp, pour the mixture into the waffle iron to capacity and cook to perfection. Once you have finished cooking all the waffles, top them with bananas, syrup, and maybe some grass fed butter and enjoy!
