Paleo Dessert Recipe: Berry Cream Bars

This Paleo friendly dessert recipe is a little bit of work for a whole lot of enjoyment. The recipe uses all organic raspberries, blueberries along with raw honey and coconut cream to make an outstanding treat the whole family will enjoy!

Ingredients:

Makes 8 bars
For the crust

  • 5 dried dates, pitted
  • 1 cup almond butter
  • ¾ cup unsweetened shredded coconut
  • 2 tablespoons raw honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the toppings (part one)

  • 2 teaspoon coconut milk/water
  • ½ cup organic raspberries
  • ½ cup organic blackberries
  • 1 tablespoon raw honey
  • 1 teaspoon lemon juice

For the toppings (part 2)

  • 1 (14 ounce) can of coconut milk (placed in refrigerator overnight), only use the cream on top, leave behind the coconut water/milk at the bottom
  • 1 tablespoon raw honey
  • 1 teaspoon vanilla extract

Instructions

Put all of the dates into a food processor and pulse them until they begin to break down. Next add the almond butter, coconut, honey, vanilla extract and salt and continue to pulse the ingredients until they are thoroughly combined. Take the mixture and press it down evenly into a bread pan that has been lined with parchment paper. Place this into the freezer while you continue with the rest of the recipe.

Spoon out the cream that has risen to the top of your canned coconut milk into a bowl and return it to the fridge. Take about 2 teaspoons of the coconut water/milk from the bottom of the can and add it to a saucepan over medium heat. Add the raspberries, blackberries, honey and lemon juice in the pan and mix together. Simmer these ingredients no more than 5 minutes or until the berries just start to become soft and then remove from heat and allow to cool.

Remove the coconut cream and bowl from the fridge and add honey and vanilla extract to the bowl and mix together. After the berries have cooled, finish the layers. Add the coconut milk mixture on top of the crust, spread it all out evenly and then pour the berries on top once again evenly. Place in the freezer for at least an hour to set up and harden a bit. Remember to keep the left-overs refrigerated and the coconut cream will melt fast! ENJOY!
