Paleo Dessert Recipe: Banana Fried Ice Cream

Who screams for ice cream? Well we scream for this non-dairy, paleo-friendly ice cream recipe because it is made from coconut milk, raw honey and almond butter. It is sure to please the kids and adults alike! It does require the use of an ice cream making machine.

Ingredients:

Serves 4
For the ice cream

  • 2 (14 ounce) cans of coconut milk
  • ¼ cup raw honey
  • ¼ cup almond butter
  • 2 tablespoons cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the toppings

  • 2 bananas, peeled and sliced
  • 2 tablespoons Coconut Cream Concentrate
  • ⅛ teaspoon cinnamon
  • Pinch of salt
  • Sprinkle of date sugar or coconut sugar

Instructions

In a medium sauce pan add two cans of coconut milk as well as the honey, cinnamon, almond butter, vanilla extract, and salt. Mix all ingredients together thoroughly while cooking over medium heat. Once the mixture becomes smooth and you are confident that all ingredients are mixed well, put the mixture into the freezer to completely cool. Once it has cooled add the mixture to your ice cream maker and turn it on.

Place a small skillet over medium heat once your ice cream is close to ready. Place the coconut butter and bananas into the pan and then evenly add the cinnamon, coconut sugar, and a pinch of salt. Cook the bananas until they become soft and caramelized. Serve yourself a bowl of your ice cream and top it with the cooked bananas. Top it all off with a touch more coconut sugar and ENJOY!
