Italian Meatloaf Recipe – Paleo Diet Entrees

This Italian meatloaf recipe is better than any meatloaf you’ll find in an East Coast diner. It is delicious! Use organic grass-fed beef and other organic ingredients. It’s a heart healthy entrée that’s great for those following the Paleo Diet.

Ingredients

  • 1lb grass fed ground beef
  • 1 yellow onion, diced
  • 1 roasted red pepper, diced
  • ¼ cup tomato sauce
  • 1 egg, whisked
  • ¾ cup almond flour
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • salt and pepper, to taste
  • olive oil, for sauteing

Instructions for Italian Meatloaf Recipe – Paleo Diet Entrees

Preheat oven to 400 degrees. Over medium heat and add one or two tablespoons of olive oil into a medium sized skillet. Now add the onions and roasted red pepper to the skillet and cook this until the onions start to turn clear and become soft. Once they are done cooking, add them to a bowl along with the rest of the ingredients for the meatloaf mix everything together well using your hands.

Evenly press the mixed ingredients into a bread pan and bake for approximately 35-40 minutes. Once your meatloaf is close to complete, add the sauce ingredients to a saucepan and heat until it begins to bubble. Let the meatloaf stand for 5-10 minutes then add sauce to the top. Toss some fresh basil on top and ENJOY!
