Bacon Spinach Stuffed Chicken Recipe – Paleo Diet Entrée

Stuff a chicken with choice ingredients and you get a dish that is simply out of this world good! Stick with organic, free-range chicken and other organic items. This Paleo Diet friendly entrée doesn’t take long to make, and cleanup is a breeze. Happy eating.

Ingredients

  • 4 chicken breasts, butterflied and pounded flat
  • 6-8 ounces of button mushrooms, roughly chopped
  • 5 strips of bacon
  • 4-5 cups fresh spinach
  • 2 garlic cloves, minced
  • salt and pepper, to taste

Begin by preheating the oven to 350 degrees. Carefully butterfly the chicken… An easy way is to cut the chicken down the middle into two and then put plastic wrap on top of the chicken and press it out until it was flat. Once the chicken is prepared, place a large skillet over medium-high heat. Place the five strips of bacon into the skillet and cook on both sides until crispy. The bacon should now be placed on a paper towel to soak up the excess fat. Once the bacon has cooled, dice it up into small pieces. Remove the excess bacon fat from the skillet, but leave about 3 tablespoons in the pan.

With the skillet still over medium-high heat add in the garlic and mushrooms and add a pinch of salt and pepper to the mushrooms. Once the mushrooms start to become soft, add the spinach and a bit more salt and pepper. Cover the skillet and allow everything to steam until the spinach begins to wilt. When the spinach is ready remove the pan from heat and add in the diced bacon. Now mix with mushrooms and spinach until thoroughly stirred. Place mixture into the center of the butterfly chicken, fold the chicken over to create a small “pocket” and use a couple toothpicks to keep it closed during the cooking process.

Arrange the stuffed chicken breasts on a parchment lined baking sheet and place it in the oven to bake for approximately 18-20 minutes or until the chicken juice runs clear. Depending on how thin your butterfly chicken breasts are, it may take a while longer. Cook to an internal temperature of 165 degrees, remove the toothpicks and ENJOY!
